I know you are probably turkey-ed out after thanksgiving. But I promise this is an awesome recipe you will want to recreate. Super easy, super fresh and Keto Friendly also, yay!! This is a perfect meal for a family of 4.
Cooking time is simple. Set your oven to 380 degrees, and by the time your oven is brought up to temperature, you will have everything prepped. We will start with the squash first. Chop into small pieces, one medium sized Acorn Squash and one medium sized Red Onion. After chopped, place in pan or cast iron dish and drizzle Extra Virgin Olive Oil, Salt, Pepper and an awesome winter Spice known as Nutmeg. Nutmeg is the key spice here. But don't over spice. Start with a little and then when you take it out of the oven when it's finished, try a bite. If you can't taste the nutmeg then add a dash more. Nutmeg goes very well with Onions, Squash, Sage and in a Tomato Sauce(Especially in Bolognese). Bake the squash for 25-30 minutes, or until fork tender.
Next we will make our sauce. Its one medium can of Tomato sauce, pre-made without any flavoring or seasoning. Grab a small sauce pan and heat some olive oil with fresh chopped garlic and crushed red pepper. Let these items warm for a couple minutes to become expressed. Then Add your Tomato Sauce with a dash of Salt and Black Pepper. Bring sauce to a simmer, and then turn off.
Last but not least, the meatballs. Grab a medium sized bowl so you can mix the ingredients. Finely dice one whole carrot, 2 green onion stalks, a handful of walnuts and 5 or 6 sage leaves. Add to the bowl. Next add one pound of Organic Ground Turkey and 2 tablespoons of plain yogurt,(preferably goat yogurt). Now it is time to get your hands dirty. Mix all the ingredients together. This recipe will yield 12 meatballs(size of golfballs). These will need to be in the oven for 20-25 minutes. A good way to see if a meatball is done, is pushing on the outside. If it is firm, then the meat is cooked. If it is still kinda mushy, then it needs a couple of minutes. When the meatballs are done, let them sit for several minutes. At this time heat your sauce up again.
