This Recipe for these Meatballs came about last year, when I was doing a daily corporate lunch catering. I was trying to create something healthy, not too expensive, and delicious. Needless to say, they were a huge hit! Since then I have created several others style of Meatballs, (which I will post about in the next few weeks). I would like to ensure you, don't have any fear on trying to recreate them. Believe me, these Meatballs are very easy to make and require just a few fresh ingredients.
Ingredients:
*With the leftover Yogurt, Chives, Parsley and Mint you will be able to create Tzatziki sauce. It goest really well on top of these meatballs. Also, add a quarter of diced finely cucumber and a squeeze of fresh lemon. Traditional Tzatziki sauce recipe is Yogurt, Lemon, Dill and Cucumber. You are just making a new version of it. :)
Ingredients:
- Ground Turkey 1 lb.
- Ground Chicken 1 lb.
- 1 can of Lentils
- 1/2 bundle of Fresh Mint, diced
- 1/2 bundle of Italian Parsley, diced
- 1/2 bundle of Chives, diced
- 2 eggs
- 2 Tablespoons of Yogurt
- Spices; Curry, Salt, Garlic Salt and Black Pepper, (Spice to your liking)
