I became inspired to start making these cookies last year when I was working in Firenze(Florence), Italy. The reason why, Firenze is located right next to a town called Prato. The people of Prato are the originators of this cookie. The name is a derivative of two Italian words. Bi-s, as in the number 2, for example, bi-cycle. We know means 2 wheels. Cotto, means to cook in the past tense. If I said, Ho cotto, I have said, I cooked. The word biscotti, means twice cooked.

- 2 eggs
- 100 g sugar
- 200 g Flour
- 1 tsp of baking soda
- 1/2 tsp of salt
- 1 tsp vanilla
