I became inspired to start making these cookies last year when I was working in Firenze(Florence), Italy. The reason why, Firenze is located right next to a town called Prato. The people of Prato are the originators of this cookie. The name is a derivative of two Italian words. Bi-s, as in the number 2, for example, bi-cycle. We know means 2 wheels. Cotto, means to cook in the past tense. If I said, Ho cotto, I have said, I cooked. The word biscotti, means twice cooked.
This is a very simple and easy recipe that has gained praise by many individuals. I tested these cookies with colleagues and friends who were from Firenze and Prato. All of them were very impressed at the results. Quite frankly, they were shocked. A woman who owned a very good acclaimed restaurant in Firenze asked me for the recipe after trying my Biscotti. Give it try!

  • 2 eggs
  • 100 g sugar
  • 200 g Flour
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tsp vanilla
