The People have spoken! Well, kinda. I asked my followers on Instagram and Facebook one simple question. "What would you like my next blog to be about?" They had two choices, health or food. Two Thirds of you voted food, and the other third was health. So to have a fair compromise, I am going to to do a little of both. In this blog I will discuss the origin of this dish, health information about some of the ingredients, and a couple other interesting facts. The last thing I will share is the the recipe itself. Pasta All' Amatriciana originates in Amatrice, in the Region of Lazio, Italy. The traditional sauce requires Guanciale(cured pork cheek), Grated Percorino (Sheep) Cheese, Tomatoes and most variations included onion. This delicious sauce is famously tossed in bucatini. Bucatini is a longer noodle, a bit on the thicker side. The name of the pasta is a derivative another Italian word, "buco". Buco, in Italian, means a hole. This longer, thicker pasta has a hole that runs down the middle.

It has generous amounts of Lycopene in it, which is great for the regeneration of skin. Tomatoes eaten before and after you are in the sun will ease your sunburn. To be noted tomatoes are best consumed with a fat or cooked a bit. Reason being, the lycopene in the cell walls is actually quite difficult for the body to break it down, if eaten raw and by itself. The fat you put with it, which could be olive oil, helps the digestion process. Along with if you cook it, this makes it easier to absorb the greatness. And guys/men/boys, you are going to want to eat Tomatoes. They are great for the prostate.
Ingredients for Leto's Amatriciana
-2 strips of Bacon
-14 cherry tomatoes
-1/4 or Red Onion
-Half a Can of San Marzano Tomatoes(net wt 28 oz)
-Dash of Red Wine
-Half a pound of pasta
-Olive Oil
-Tablespoon of Butter
*Recipe is for 2 people
Steps to Success:
1. Sautee your Diced Bacon strips in a medium to large sauce pan with Olive Oil. Make sure the heat in the pan is low to medium. Do this for 6-7 minutes.
2. Add your pasta to the boiling water. Pull out the pasta 2 minutes before the said finishing time. If it says on the box 11 minutes, cook for only 9 to 9 and a half minutes. This will help you attain the al dente pasta.
3. Add Red Onion and diced Cherry Tomatoes to your sauce pan. Sautee the three items in the pan together for 4 minutes. Keep it at the same heat.
4. Add a dash of Red wine and half a can of Pureed San Marzano tomatoes. Turn the heat up to medium. Get a nice simmer going.
5. Add a bit of the starchy pasta water to the sauce. This will help the sauce stick to the pasta.
6. Strain your pasta and add it to the sauce. Turn the heat to medium to high. Add your tablespoon of butter. This will help thicken the sauce. Cook/toss the pasta in the sauce for the remaining two minutes.
7. Plate the pasta and top with grated Percornio Cheese.
8. Enjoy!!!!
