Majoram is a lovely spice that has been used since the early days by Romans and Greeks. It is in the family of oregano. In fact, in the middle east they are synonymous with each other. They consider it the sweeten oregano because it isn't as pungent as regular oregano. It prefers to be cooked very lightly. Best suggestions is to use this spice at the end of cooking. The flavor profile is citrus and sweet pine. Leaving a nice freshness taste in your mouth after consumed.
Marjoram can be used in many dishes to add the finishing touch. Italians use it in pasta dishes or sprinkle it on pizza. My personal preferences is to make a pasta with sautéed Mushrooms, Squash, Cherry Tomatoes or Tomato Sauce, and finishing it with fresh chopped Basil and Marjoram.
It can be used when making a veggie omelette. Sprinkle a bit in the eggs right before they finish. Yesterday I made salad because it goes very well with greens, i.e. Spinach and Romaine. One suggestion is to mix it in with your homemade vinaigrette. Along with the vinegar, it will mask the bitterness of any green.
I would also use this when making Rotisserie Chicken with Roasted Potatoes. Seasoned the Chicken with Thyme, Sea salt, Black Pepper and Lemon. Dress the potatoes with Rosemary, E.V,O.O. and Crushed Red Pepper. Finish both items with a Sprinkle of Marjoram.
