I was very hesitant when I was using this spice. I have always associated Lavender with soaps and laundry detergent. I was pleasantly shocked how it could impact and enhance culinary items.
Before I get into the suggested culinary pairings, here is a little history on Lavender.
Lavender can be found all over the world, because it grows very well in hotter climates. it dates back to the Greek Empire. It was consider a holy herb. Lavender falls into the Mint family. There are 47 known genus of Lavender. They believe the word Lavender was a derivative of the old French word, Lavendre, which is a derivative of the latin word, Lavare, meaning to wash. It appears from the begging they have been using it in soaps.
Lavender is a very versatile spice. It can enhance savory and sweet dishes. It closely associated with Rosemary because of its taste and pungency. Here are my suggestions for food pairings.
Muffin/Cookie: Lavender, Dried Cherry, Orange Zest and Ricotta.
Rotisserie Chicken: Lemon, Lavender and Thyme.
Potatoes; Rosemary, Lavender and Walnuts.
Lamb: Fresh Mint, Lavender and Onions.
