To make this crust I used cinnamon graham crackers, ginger snaps and fresh walnuts. The reason behind using these 3 items was simple. I was making a personalize cheesecake for a clients request. From previous experiments I have had with biscotti and gelato, I knew cinnamon, ginger, and walnuts all pair well with scotch/whiskey.
The recipe for this crust is listed below. I created this crust by viewing a traditional graham cracker recipe and applying simple logic. I saw a traditional crust required 14 graham crackers, which equated out to 7 oz after weighted on a scale. From there, I subtracted several graham crackers and replaced the remaining ounces with walnuts and ginger snaps to add up to 7 oz. After you reach your 7 oz, puree the items together with the sugar, then add the butter and mix together. Voila, you are finished!
